HONEY
This recipe is one of my families all-time favorites and I hope it will become one of yours.
Banana Cake
2 cups all-purpose flour
1 cup sugar
1-1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 cup mashed ripe banana (about 2 meduim size)
1/2 cup honey
1/2 cup buttermilk or sour milk
1/2 cup shortening
2 eggs
1 tsp vanillla
In a bowl combine flour, sugar, baking powder, baking soda,
and salt. Add banana, honey, buttermilk,
shortening, eggs, and vanillla. Beat with an
electric mixer on low speed until combined. Beat on medium speed
for 3 minutes. Pour batter into 2 greased and floured 8x1-1/2x or
9x1-1/2-inch round baking pans. Bake in a 350 degree F oven for
30-35 minutes or till a toothpick comes out clean. Cool on racks
for 10 minutes. Remove from pans; coll on racks. Serves 12.
For a variation my son likes me to add 1/4 cup mini chocolate
chips to the cake mix before baking.
Texas "K" Bars
3/4 cup honey
3/4 cup peanut butter
3 cups "Special K" cereal
1 tsp vanilla
1 cup chocolate chips
1/2 cup butterscotch chips
Bring honey and peanut butter to a boil. Add cereal and vanilla. Pack into ungreased cake pan. Melt chocolate chips and butterscotch chips; spread over bars. Cool and cut into bars. Makes 24 bars.
LAMB
This lamb recipe created by the American Lamb Council has only 10.0 g of fat, 334 calories, 80.0 mg of cholesterol and 804.0 mg of sodium per serving. It takes 15-30 minutes to prepare and 30-60 minutes to cook.
Easy Lamb and Potato Bake
4 American Lamb shoulder blade chops or leg
steaks, 3/4" thick (1-1/2 lbs.), trimmed
2 Tbsp cornmeal
1 Tbsp prepared mustard
4 tsp water
1 package (4.5 to 5.5 oz) scalloped potato mix, 4 or 5 serving
size
1 tsp caraway seeds
Non-stick cooking spray
Spray skillet with non-stick cooking spray. Brown chops over medium-high heat about 5 minutes on each side. Prepare scalloped potato mix in an 8x8x2 baking dish, according to package directions except omit margarine and add caraway seeds. Combine cornmeal, mustard and water; mix well. Spread mustard mixture on surface of browned chops; place chops mustard side up on top of potato mixture. Bake uncovered, in 400 degree F oven for about 35 minutes or until lightly browned. Remove from oven; let stand 5 minutes.
CHICKEN
Double this very easy recipe
when I have leftover oven roasted chicken.
Chicken A La King
1/4 cup butter
1 cup sliced fresh mushrooms or one 4-ounce can mushroom stems
and pieces, drained
1/3 cup all-purpose flour
1-3/4 cups milk (I use fat-free half -n- half)
1 cup chicken broth
2 cups cubed cook chicken
4 slices of toast
In a saucepan melt butter. If using fresh mushrooms, add mushrooms an cook till tender. Stir in flour, 1/2 teaspoon salt, and 1/4 tsp pepper. Add milk and chicken broth all at once. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Add canned mushrooms, if using. Stir in chicken. Heat through. Spoon atop toast. Serves 4.
